Talisker , like the other fine bottlings from Diageo's series of Scottish distilleries, also has a Distiller's Edition. They come in different vintages and this one was distilled in 2006 and bottled in 2016. This bottling has been aged in Jerez Amoroso sherry casks, which adds sweetness and complexity to this beautiful whisky. Talisker The Distiller's Edition has delicate aromas of salt, oyster shells and lovely pink peppercorns. On the palate you'll find malt sweetness, orange peel, fruit, orange marmalade, bonfire smoke, coriander seeds, and the famous note of freshly ground black pepper and lovely citrus. Aged in Jerez Amoroso Cask Wood The Cuillins are the the dramatic hills of Skye, the island home of Talisker. The distillery is on the exposed west coast of the island, on the seaweedy shores of Loch Harport. The distillery was founded in 1830 by two doctor's sons, Hugh and Kenneth MacAskill. After a number of false starts on other sites, the distillery was established in 1831 at Carbost and expanded in 1900 at which point it had its own pier, tramway and tied cottages. It even had its own currency, denominated in days worked. It switched to double distillation in 1928 and was partly rebuilt in 1960 after a fire. It still retains the tradition of using wooden fermentation vats or washbacks. Water for the process comes from Hawk Hill, beside the distillery. The distillery has five stills (a relic from the days when all Talisker whisky went through triple distillation) and the wash stills are unusual in having U-shaped lye pipes to take the vapour. A small secondary pipe recycles some of the vapour back to the still. The wooden tubs for the condensors ('worms') are outside the building and survived the fire in 1960 courtesy of a last-minute change in the wind. The Distillers Edition brings a new dimension to the Classic Malts of Scotland. Select distilleries choose a small number of casks for double maturing, or finishing in another wood, in order to bring new depth and complexity to the whisky. Talisker, which combines the island style of distinctive peatiness with it own individual notes of spice and pepper, has accented its character by finishing in sweet Jerez Amoroso cask wood, amplifying Taliskers sweetness and rounding out its rugged peaty character. 45.8% Alc./Vo The Talisker Distillers Edition is a single malt whisky from the excellent Talisker distillery on the Isle of Skye. A special Distillers Edition is not widely available. A wonderful scotch the only thing unlucky about the Talisker is that they didn't produce more of it!
